There’s a reason you’re seeing so many banana bread recipes all over Instagram, it's perfect for those spotty bananas no one touches at home. While that’s wonderful, these eggless banana muffins are quicker and more convenient, who doesn’t love that?
These banana muffins are soft, delicious, easy-to-make muffins with tons of flavour. Oh, and they’re eggless too! Bake these #AtHomeWithToujours and enjoy them with your hot beverage of choice.
Yield: 10 Muffins
Ingredients
1) 225g Fresh Banana2) 65g Salted Butter (Melted)
3) 90g Milk
4) 50g Caster Sugar
5) 50g Brown Sugar
6) 1/2tsp Cinnamon Powder
7) 1/2tsp Vanilla Extract
8) 120g Flour
9) 1/4tsp Baking Soda
10) 1/2tsp Baking Powder
A handful of whichever ingredients you want to use as a garnish, we used Muesli, Dried Blueberries, and Walnuts.
Recipe
1) Preheat the oven to 170C and spray your muffin tin with nonstick cooking spray or use cupcake liners. (We used individual muffin tins and cupcake liners).2) In a bowl, add the peeled bananas and mash using a fork.
3) Melt the butter in the microwave for 20-30 seconds, until completely melted.
4) To the same bowl, add the melted butter, milk, caster sugar, brown sugar, vanilla extract, and cinnamon powder, and whisk till everything is combined and the sugar melts.
5) Place a sieve over the bowl, add the flour, baking soda, and baking powder, and run it through the sieve into the bowl.
6) Whisk all the ingredients together till combined. (Tip: If you want to add nuts or chocolate chips, fold them in at this step)
7) Spoon the batter into your baking tins, filling them to the top. Garnish the muffins according to your preference. (Tip: You could use nuts, chocolate, dried fruit, granola, whatever you like.)
8) Bake at 170C for 18 to 20 mins. Check if your eggless banana muffins are done by inserting a toothpick which should come out clean.
