Recipe - Healthy Carrot Cake Recipe

Bake your cake and eat it too, this quarantine does not have to derail your clean lifestyle! Enjoy a healthy, hearty, comforting carrot cake that is sure to become a quick favourite. This cake is extremely easy, all ingredients go into one bowl, give it a good mix and its ready to go in the oven. #AtHomeWithToujours

Yield: 1 Cake

Ingredients

For the Carrot Cake:

1) 2 Eggs
2) 120g Maple Syrup
3) 180g Carrots
4) 80g Wholewheat Flour (sifted)
5) 3g Baking Powder
6) 2g Baking Soda
7) 80ml Oil (We used Sunflower oil, but you can use any oil you like)
8) 100g Golden Raisins (Soaked for 1 hour)
9) 3g Cinnamon Powder
10) 120g Cashews

The cake by itself tastes delicious but for a little added indulgence we do suggest using a cream cheese frosting.


For the Cream Cheese Frosting:

1) 120g Light Philadelphia Cream Cheese (You can use normal as well if you can’t find the Light version)
2) 50g Unsalted Butter
3) 25g Maple Syrup

Recipe:

1) Soak the raisins for atleast an hour so they are nice and juicy for your cake.
2) Preheat the oven to 170oC and line your cake baking tin with butter-paper (Tip: its preferable to use a 7ā€ so you get a nice height for the cake but any tin you have will do, we used an 8ā€ in the video). Grease the butter-paper with a little oil or nonstick cooking spray.
3) In a large bowl, add the eggs and maple syrup and whisk to combine.
4) Next, add the carrots, whole wheat flour, baking powder and baking soda into the bowl and mix together till it is well combined
5) Add the oil and combine into the mixture.
6) Drain the raisins and stir them into the mixture. Add the cinnamon powder and crushed cashew nuts and combine well. (Tip: Put the cashew nuts in a ziploc bag and use a rolling pin to crush them, you don’t want to crush them too fine, the nuts should still have some bite to them.)
7) Pour your cake batter into your greased baking tin and place it in your preheated oven for 35- 40 mins.
8) Check if your cake is done by inserting a skewer or toothpick in the centre of your cake, it should come out clean or with very few crumbs.Ā  Allow your cake to cool completely before frosting or removing from the baking tin. The cake should be room temperature when you frost it, otherwise the frosting will melt.
9) For the cream cheese frosting, add the cream cheese, unsalted butter and maple syrup to a stand mixer, or you can also use a hand-held mixer, and mix before adding the next ingredient. This is important for a lovely whipped frosting. Remember to always whisk after each step!
10) Once your frosting is ready and cake is cooled, ice the cake with the frosting if you like, this is completely optional and the cake is delicious on its own as well.
11) Top with walnuts or any other nuts you like.
