Can you tell we love our cookies over here at Toujours? A skillet cookie is basically a giant cookie cake eaten straight out of the oven for a gooey cookie that will have you begging for more! The best part is that it is so simple to make #AtHomeWithToujours!
Have a special event coming up and bummed that you canāt order a cake? This is a super simple and absolutely delicious recipe to make a cookie cake at home. Weāve got rave reviews for this one!
Ingredients
1) 125g Butter2) 110g Brown Sugar
3) 60g Caster Sugar
4) 1 Egg
5) 1 Tsp Sea Salt
6) 150g Flour (sifted)
7) 1/2 tsp Baking Soda (sifted)
8) 1 Tsp Vanilla
9) 100g Semi-sweet chocolate chips or chunks (or any chocolate you prefer)
10) 50g Nutella (or any filling you prefer like peanut butter, melted chocolate, biscoff etc.)
Recipe
1) Preheat oven at 175oC.2) Melt the butter over the stove and remove from heat.
3) Add the caster sugar and brown sugar and stir till melted and smooth.
4) Let the mixture cool for 10-15 mins. (Tip: Do NOT add the eggs now or they will end up scrambled).
5) Add the melted butter and sugar mixture to a bowl. (Tip: You can continue mixing in the skillet if you like and do not want to layer with Nutella or any other spread)
6) To the same bowl, add the egg, salt, flour, baking soda and vanilla. Mixing between each step till well-combined.
7) Once the batter is combined, fold in the chocolate chips. (Tip: You can also use any chocolate you like cut in chunks, which is what we did)
8) Take half the dough and layer your skillet, then spread the Nutella on the dough and cover with the other half. (Tip: You can use any spread you like or no spread at all if you want all cookie)
9) Bake at 175oC for 20-25 mins until the edges are golden brown, the centre will be slightly soft which is the way its meant to be. If you would like it more firm, pop it in the oven for a few more minutes. (Tip: The smaller the pan, the thicker the dough which means a longer cooking time, we used a 7ā skillet). You can check if the skillet cookie is done, insert a skewer or toothpick in the center and if it comes out clean or with very few crumbs, its done.
10). Eat the skillet cookie warm (Tip: if you have some letover, warm in up in the microwave for 8-10 seconds before eating) and topped with vanilla ice-cream (completely optional, but tastes great!)
